#514 Gastronomic popup restaurant Roots, Bruges

restaurant review #514 – Gastronomic plantbased menu, with local ingredients! This was a pop-up restaurant, a project – from concept to execution – run by students of @viveshogeschool (last year BA Culinary arts).
The menu was fully plantbased, and all ingredients locally sourced! Yeah!

5-course dinner menu – all inclusive at 99€ pp – with either wines or pairing mocktails

We had a lovely dinner, delicious courses, well balanced. With pairing mocktails. The last starter with dumplings + the dessert were our favourites. The chocolate/tofu amuse was not really our thing.

Some timing things to pick up:

● Amuses were served pretty quickly after arriving. But then it took quite a while for the 1st starter. Luckily, after that, courses followed very swiftly!
● During the 2nd starter we suddenly saw all other tables getting focaccia, but we were skipped, so we had to ask. Btw, the plantbased butter was delicious!
● We got the mocktail for the 1st starter, immediately followed by the mocktail for the 2nd starter, without having had any food yet!

But otherwise everything ran smoothly.

Although we don’t drink alcohol, I did inquire about matching vegan wines (given it’s a fully plantbased concept). Seems they had no idea of its existence so this was overlooked. There are many great resources about vegan wines/beers, eg barnivore.com. So dear graduates, if you ever work in a vegan hotel/restaurant or welcome vegan patrons, be prepared, you’ll surely get this question again 😉

Very friendly.
Restaurant is on ground floor, small step to get in. Two toilets at the back. The men’s toilet is accessible. Toilets clean. Didn’t find a bin (for toiletries and paper) at the ladies though.

Overall, a lovely experience. A pity the pop up was only for 4 days (3rd week of December 2024), otherwise we would be regular visitors!
