#49 Fantastic dinner at Terre à Terre, Brighton, UK *****

Restaurant review #49 – A couple of weeks ago, we spent some days in and around Brighton, in the southeast of England (UK). Brighton is a vibrant but also quite touristic place. I will put a more general post about our visit to Brighton up later. And there are several restaurant reviews coming up, as we defintely ate a lot! Brighton is known to be a hub for vegans, with several vegan and vegan friendly restaurants. That is also the main reason why we choose to go there this Summer! Terre à Terre is a more upstyle restaurant in Brighton. It is a vegetarian restaurant, with lots of vegan options standardly available. When I asked in vegan groups about definitely must places to visit, Terre à Terre was mentioned several times, so we really didn’t want to miss this! Vegan baking for the Vegan Challenge

I haven’t posted many entries on The Bruges Vegan lately, because I was busy posting a series a vegan baking recipes on our other blog veggieleven.be. In April 2015, I posted a vegan baking recipe daily, to match the Vegan Challenge (a campagne of the Dutch organisation NVV). So all in all 30 recipes for pies, cookies and muffins! We’ve been vegan for quite some years now, and I’ve baked many goodies in that time, so I thought it would be a good occasion to show newbie vegans or those trying a vegan lifestyle that baking pies, cupcakes and cookies without animal ingredients is … easy as pie! 🙂 Some of the recipes were already posted on the Bruges Vegan, and some other are favourites of mine or recipes which I consider to be good introductions into the world of vegan baking. Easy vegan pancakes

Super easy vegan pancakes, with easy to come by ingredients. Ingredients easy vegan pancakes Makes 8 pancakes 2 cups all purpose flour 3 to 4 tbs sugar 4 tbs baking powder 1/4 ts salt 2 cups soy milk 4 tbs canola oil Making easy vegan pancakes Heat pan. Mingle the dry ingredients (flour, sugar, baking powder, salt). Mix in the soy milk and canola oil. Put a big drop of batter in heated pan. Bake for about 2-3 minutes till bubbles form, then flip to bake other side. Serve with maple syrup, coconutblossum syrup, fruit, whip, jam, … Yummie!

Oat raisin banana waffles

These are rather savoury waffles, but sweet nonetheless. These vegan waffles are without normal sugar, but made with maple syrup. Ingredients (makes 5 double waffles – like the one in the photo) 130g regular flour 2 ts baking powder 1 ts baking soda 1 1/4 ts ground cinnamon 1/4 ts ground nutmeg 1/2 ts salt 90g small rolled oats 1 ripe banana 350ml soy milk 3tbs maple syrup 3 tbs canola oil 115g raisins Making oat raisin banana waffles Grease the waffle iron with a little bit of canola oil. Preheat the waffle iron. In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, salt and oats. In another large bowl, mash the banana well with a fork. Mix the banana with the wet ingredients: soy milk, maple syrup and vegetable oil, till only very small lumps of banana left. Mix the dry ingredients with the wet ingredients. Fold in the raisins. Bake the waffles according to the instructions of your waffle iron (in our case, being 6 minutes on the nearest highest heating level)     The …
