Fancy homemade dinner for World Vegan Day!

As you can probably tell from the number of restaurant reviews on our blog, we do like to go dining out. But we also love to stay at home and experiment in the kitchen (an overview of several homemade meals can be seen here: what do you eat?). Yesterday was World Vegan Dayย (November 1) and for that occassion it was a bit more fancy than usual! Everything prepared by Jim, I just made the photograph (and ate it ๐Ÿ˜‰ Delicious! Tower with layers of: – Chards with cream cheese and chopped roasted pecan nuts – puree of pumpkin and lentils with ginger – potatoe mash with chicory. On the side: Shiitakes and chanterelles baked in garlic, oven roasted Brussels sprouts in olive oil and herbs, soy chunks baked in ketjap manis, with onions and carrots in gravy sauce, jerusalem artichoke steamed and baked in cashew cream with parsley. Lovely vegan dinner at friends. Inspiration for a vegan festive menu!

A couple of weeks ago, we were invited for dinner at the house of vegan friends.ย We had such a lovely evening, and the food was great! So I thought I’d share the vegan menu we were served. If you are still looking forย inspiration for a vegan festive menu for the coming holidays, take a look at this! For appetizers we had a trio of spreads with crackers:ย cashew-rucola spread, tapenade of sundried tomatos and basil and lentils apple spread. What followed was a little glassย withย aย salad ofย quinoa, mango, avocado and cilantro (unfortunately I forgot to take a photo of this!). Thenย came leek and pumpkin cream soup. The starter was homemade (!) tagliatelle with forest mushrooms, peas and pieces of ‘bacon’, with a creamy sauce based on demi-glace and brandy. The main dish was a ‘beef wellington’ with tree variations of mushrooms and cashews, with bรฉarnaise sauce. Andย mash of potatos and parsnip, and caramelised chicory and lentils on the side. Wow! #38 Our dinner at resto Taj Mahal, De Koog (Texel, NL) ***

Restaurant review #38 – On one of our evenings in Texel, we went for dinner in Indianย restaurant Taj Mahal, in De Koog. De Koog is a small village on the western side of the island. Texel is 370km from Bruges, North west of Amsterdam. I did not inquire beforehand whether we could get anything vegan, since this is usually no problem at Indian restaurants. There are several ‘vegetarian’ labelled dishes on the menu at Taj Mahal in De Koog, of which some appear to be vegan. We inquired which dishes would be suitable for us (no eggs, no dairy, ..), and were advised by the waitress. So weย ordered shabji biryani (mixed vegetables with rice and spices, 15,75โ‚ฌ) and shabji curry, a curry dish with vegetables (without the cream, 15,25โ‚ฌ). And these side dishes: baked vegetables (Shabji Bhajee, 5,25โ‚ฌ) and mushrooms with onions, tomatoes and chili (Mushroom Bhajee, 6โ‚ฌ).
